What Florida code actually requires in a commercial kitchen: GFCI, dedicated circuits, disconnects, bonding, hood interlocks, permits and inspection.
If you are opening or renovating a kitchen in Florida, the short answer is this: your electrical work is judged against the Florida Building Code, which adopts the National Electrical Code with state amendments, and your local building department enforces it. In a commercial kitchen, five things drive almost every correction we see written up: GFCI protection where the code requires it, dedicated circuits sized to each appliance nameplate, a disconnecting means that is accessible and in sight of the equipment it serves, correct grounding and bonding, and a shutdown interlock tied to the hood suppression system. Get those right on paper before anyone pulls wire and the inspection goes quickly. Miss one and you find out on the day you wanted to open.

Start with the equipment schedule, not the panel
Every kitchen job we quote begins with a list, not a load calculation. We want the make, model, and nameplate data for every piece of cooking and refrigeration equipment: voltage, phase, amperage, and whether it is hardwired or cord and plug. That schedule tells us what circuits you need, what the service has to support, and where the money is going.
A few things that surprise owners:
- Most commercial cooking and refrigeration equipment wants its own dedicated circuit. Sharing is how nuisance trips start.
- Three-phase equipment in a building with only single-phase service is a much bigger job than a new breaker. It can mean a utility coordination request and a service change.
- Walk-in coolers, ice machines, and reach-ins draw more on startup than their running numbers suggest, and they run in Florida heat all day.
- Equipment specified overseas or bought used often has a different voltage or connection than the spec sheet you were handed.
If you are still selecting equipment, tell us before you buy. Swapping a model at the spec stage costs nothing. Swapping it after the rough-in is billable work.
What inspectors actually look at
Inspectors are not hunting for obscure violations. They are checking the same short list on nearly every kitchen.
Receptacles in a commercial kitchen require GFCI protection, and that includes locations owners do not expect, like behind equipment and near sinks and dish areas. Receptacles serving wet or damp locations need proper covers. Anything within reach of a spray-down area gets extra attention.
Disconnects come up constantly. Hardwired equipment needs a disconnecting means the staff or a technician can reach, and it needs to be where the code says, not tucked behind a fryer. We plan disconnect locations during layout so nobody has to relocate a box after the walls close.
Bonding and grounding get checked hard in kitchens because of all the stainless, the gas piping, and the water. Every metal enclosure, raceway, and appliance frame has to be properly bonded back to the system ground.
The hood interlock is the one that stops openings. When the fire suppression system discharges, power to the cooking appliances under that hood has to shut down. That means shunt trip breakers or contactors wired to the suppression panel, coordinated with the fire alarm contractor and tested in front of both the electrical and fire inspectors. If the electrician and the hood company never spoke, that test fails.
Emergency and egress lighting, exit signs, and the labeling of panels and circuits round out the list. Panel directories that say "kitchen" instead of naming each circuit get flagged, and they make every future service call slower and more expensive.
Permits, inspections, and the calendar you are really working against
Commercial kitchen electrical is permitted work everywhere in Florida, and the process varies by jurisdiction. West Palm Beach, Boca Raton, Boynton Beach, Wellington, Palm Bay, Cocoa, and Rockledge each run their own building department with their own plan review queue and their own inspection scheduling. Some want signed and sealed engineered drawings for a full kitchen build-out. Some will take a permit application for a smaller scope.
Plan for a sequence, not a single visit. Typically there is a rough inspection while the walls and ceilings are open, then a final once equipment is set and connected, plus a separate fire inspection covering the suppression interlock. Health department and mechanical sign-offs run on their own track and can gate your certificate of occupancy.
Build review and inspection time into your opening date. The most expensive mistake we see in restaurant work is not a code violation, it is a lease that started three weeks before the permit cleared review.
What drives cost, and what a real quote should include
Nobody can price a kitchen honestly from a phone call. What moves the number is the size and type of your existing service, whether you need three-phase, how far the panel is from the equipment, whether the utility has to be involved, the condition of the existing wiring in an older building, whether we can work during the day or have to work nights around an operating dining room, and the permit and inspection fees in your jurisdiction. Industry cost ranges published online are typical ranges only and vary widely by site, so treat them as background rather than a number to budget from.
